Smoked Queso

serves 10-20

1 pound spicy pork sausage* 

1 8-ounce package cream cheese, cubed

1 32-ounce package velveta, cubed

16 ounces of your favorites cheeses (cheddar, pepper jack, colby jack, gouda, gruyere, etc), shredded or cubed

1/2 yellow onion, chopped

1 jalapeño, seeded and minced

1 can original Rotel, undrained 

1 cup milk, plus more if needed

salt and pepper, to taste

1 bunch cilantro, chopped

Heat Traeger to 350°F.**

In a sauté pan over medium heat on your cooktop, cook the sausage, breaking it up into smaller pieces as it cooks. (*If using ground beef or turkey, season with salt, pepper, garlic powder, onion powder, and cumin as you cook.) Remove to a paper towel-lined plate to drain. 

Place cheeses, onion, jalapeño, Rotel, cooked sausage, and milk into a large roasting pan. Place onto smoker and let cook for 30-40 minutes, stirring occasionally. Add additional milk, if needed, to get the desired consistency. 

Remove from the smoker. Season to taste with salt and pepper. Stir in half of the cilantro and garnish with remaining cilantro. Serve immediately with The Store chips. Reheat as needed. Store leftovers in the refrigerator. 

(**Can be made in a 350°F oven.)
